Lean Spinach Artichoke Dip

2 cans of white cannellini beans

1 6-8 oz. package light sour cream

1 bag of baby spinach chopped

2 cans of artichoke hearts packed in water (not oil) and chopped

1 cup of grated parmesan cheese

? white onion diced fine

3 cloves of garlic minced

Chopped fresh dill to taste

Salt and pepper to taste

Directions

  1. Preheat your oven to 375 degrees.
  2. Sautee the onion and garlic until soft.? Add to a blender or food processor along with the white beans and sour cream.? Blend until smooth and creamy and add to a large mixing bowl.
  3. Add the spinach, artichoke hearts, and half of the parmesan.? Mix until combined.
  4. Add fresh chopped dill, salt and pepper to taste.
  5. Transfer to a 9 x 13 baking dish.? Top with remaining parmesan.? Bake at 375 degrees for 25 minutes.? Set the oven to broil at the very end to brown the top.
  6. Serve with your favorite veggies, pita chips, baguette, or crackers.
